CHATEAU D’OUILLY
Located in the village of Highweek (literally = high village), Chateau D’Ouilly overlooks the lush Lemon Valley. The house has been with the Dolley family for over forty years and benefits from the warmth of the Gulf Stream and the South facing aspect.
As inspired by my friend and winemaster, Chris Leathlean, I have taken up the vintners art with a vengeance in 2002.
Most of the wine I have made has come from fruit from the garden, supplemented by some enhancers such as bananas, sultanas etc. But our winemaking rose to new heights with the acquisition of a mass of bilberries (blueberries).
